Katrina's Stew Recipe from Butch Theo's
1 pound Sepe Farm Lamb stew meat or shanks, cut into 1" pieces
1 clove garlic, chopped
1 onion, chopped
About 1 cup each celery and carrots, chopped
1 green pepper, chopped
1 squash, rind removed and flesh chopped
2 bay leaves
1 cup rice, uncooked
1 can stewed tomatoes
8 cups water
Brown the lamb, garlic, and onion in olive oil. When fully browned, add the tomatoes and water. Bring to a boil and add chopped vegetables (squash can be added 1 hour later) and whole bay leaves. Add salt and pepper to personal taste. Cook approximately two hours or until vegetables are cooked. Add rice, cook until done. Dinner is ready!
